“American beers represent boldness and originality,” he says.
“We’re a nation of immigrants, so in our food culture, we start with imported ideas, then riff on them. Like IPA, a long-neglected historical British style; today’s popular IPAs are totally American. It’s our hop varieties, how we use them; a punk sensibility that runs past traditions while it’s nodding to them.”
“As much as I love wine,” admits Garrett, “beer has a much broader range of flavors.” The brewer starts with a flavor target, then works with yeast strains, barrel aging, and other ingredients, just having fun. “That’s what makes it such a great match for foods.”
Garrett gives some credit to his filmmaker background for being a successful, passionate brewmaster. “Like a memorable movie, I want you to care about what you’re experiencing. To have a story play out across your palate, then say, ‘That was great!’ as you savor that final, lingering moment.”
