Grilling Meat with Basting Oil
From juicy steaks to pork chops, this easy method using basting oil locks in flavor.
Directions
1. Mise en Place
- Drizzle both sides of meat to lightly coat with basting oil; season with salt and pepper.
- Preheat grill on HIGH 10 min.
- Clean grill with wire brush. Using soft cloth, coat grill grate lightly with vegetable oil or use grill wipes.
- Reduce heat.
2. Cook
- Place meat on grill; sear 1-3 min until color changes about one-quarter of way up from bottom. Turn over meat; baste. Sear 1-3 min.
- Turn over meat a second time; baste. Sear another 1-3 min. Turn over a third time; baste. Check internal temp by inserting thermometer halfway into thickest part of meat (see temperatures below).
3. Finish
- Transfer to serving platter.
- Let rest 5-10 min (except poultry and ground beef).
Final Temperatures
Beef:
- 125° Rare: Very red, cool center
- 130° Medium: Pink, warm center
- 145°+ Well: No pink, very warm center
Pork: 150°
Poultry: 165°
